Food-grade salt is defined as “a crystalline product consisting of 97% sodium chloride, which is used as an ingredient or flavourant in or on a foodstuff, and which may be obtained from the sea, underground rock salt deposits or natural brine, and which can also be referred to as table salt, cooking salt, flavoured salt or dendritic salt”. It is stated herein that food-grade salt shall not contain less than 97% sodium chloride on a dry matter basis, with the exclusion of food additives. The regulations also set out the iodation requirements of food-grade salt, and the additives allowed to be contained.
